Lamb's tongue is a very delicate delicacy, small in size (weight 150-250 g), so it is customary to cut it lengthwise, not across. It is tasty boiled and stewed, and has practically no lamb flavor. Remove the tough upper skin from the tongues before use. It is better to do this while the tongue is warm, then the skin will be removed more easily.
