A mutton shoulder is used for shish kebab, minced meat or roll, it can be baked in the oven whole or cut into pieces for stew or pilaf. You can cook sausage, sausages, manti from meat. Ideal for making soups, shurpa and other first courses. The scapula is well dried and lends itself well to the smoking process. It is rich in amino acids, iron, contains extractive substances that promote better absorption of food. Mutton has less cholesterol than other types of meat, so it is recommended as a food for children and older people.
